Ingredients

Chopped fine Large Onion
Diced small Large carrot
5 - Diced small Stalks of celeray
Minced Garlic
1/2 small green - shredded fine Cabbage
1/2 lb. - cut into 1/2 inch pieces Bacon Cut into 1/2 inch pieces
1 lb. Potatoes Peeled and medium diced

Preheat a large soup pot over medium-high heat. Add the bacon to the pot and cook for 5 minutes or until crisp.

Add the diced onions, garlic, carrots and celery and continue to cook for 5 minutes.

Add the green cabbage, potatoes, tomatoes, beans and beef stock with the grated cooked beets.

Bring the soup to a boil and season lightly with salt and pepper- add the cooked roast beef. Reduce the soup to a low simmer and continue to cook for 1 hour.

Remove the soup from the heat. Add the fresh dill, vinegar, green onions and sour cream- check seasoning and add more salt and pepper if necessary.
