- 1 cup semi-sweet bitter chocolate
- 1 cup whipping cream
- 1 cup icing sugar
- 3 tbsp. granulated sugar
- 3 tsp. vanilla
1- Combine chocolate, half of the whipping cream and icing sugar in a bowl.
2 – Place over a pot of simmering water and stir until the chocolate is melted and all of the ingredients are completely mixed. While the chocolate is melting.
3 – In a separate bowl, mix together the remaining whipping cream with the granulated sugar and vanilla.
4 – Whip until thick and stiff peaks form.Fold whipped cream into the melted chocolate mixture and refrigerate for 1 hour.
5 – To serve, spoon some of the mousse onto a white plate and garnish with fresh berries and chocolate shavings.Note- perfect recipe to freeze and use as an iced parfait
