- 7 egg yolks
- 2 tbsp. sugar
- 1 1/3 cups 35% cream
- 200 grams bitter dark chocolate
1 – Mix sugar and eggs in a bowl until the sugar is dissolved. Heat cream in a saucepan until a low boil forms.
2 – Remove from heat. Add the crumbled bitter chocolate and stir until melted.
3 – Temper with egg yolk mixture and add to the pre-baked tart shell.
4 – Bake in a preheated 350-degree oven and bake for 15-20 minutes or until set.
5 – Remove and chill.
