- 2 lbs. loaf egg bread (challa10 whole eggs
- 8 egg yolks
- 1 litre 10% cream
- 1 litre 35% cream
- 2 tbsp. ground cinnamon
- 1 litre chopped tinned peaches – drained
- 1 cup chopped cranberries – fresh or dried
- 2 tbsp. vanilla
- 600 grams brown sugar
- 400 grams white chocolate
1 – Cut the bread pieces into 1″ cubes. Toast in the oven for approximately 5 minutes. Remove from heat.
2 – Combine eggs, yolks, cream, cinnamon and sugar. Pour the cream and egg mixture over the toasted bread and mix thoroughly.
3 – Add the peaches, cranberry and chopped chocolate. Pour into a shallow baking dish and bake for 45-60 minutes, or until set. Remove from heat and serve.
