- 120 grams of butter
- 120 grams of chocolate
- 2 eggs and 2 egg yolks
- 4 Tbsp. icing sugar
- 1 tsp. flour
- 1 tsp. ground ginger
- 1 tsp. ground allspice
- Pinch nutmeg
1 -Over simmering water, heat the butter and chocolate together until the chocolate is almost melted.
2 – Beat together the eggs, yolks and sugar with a wisk until the mixture becomes light and thick.
3 – Beat the still warm chocolate mixture and pour it into the egg mixture.
4 – Quickly beat in the flour until just combined.
5 – Add the ground ginger, allspice and nutmeg.
6 -Butter and lightly flour 4 small ramekin dishes.
7 – Tap out the excess flour then butter and flour again. Divide the batter among the ramekins. Preheat he oven to 450 degrees.
8 – Place the filled ramekins onto a baking tray and bake in the oven for about 6-7 minutes. Remove from the oven and invert the ramekin into a serving plate. Serve immediately.
